Southern Teriyaki Mushroom Jerky is button mushrooms in teriyaki with hickory smoke — the meat-free version of HFM Farm's Southern Teriyaki. It's the lightest thing on HFM Farm's shelf by calories and the lowest-sodium of the two mushroom flavors at 330 mg. The teriyaki-and-smoke combination works well on mushroom — smoke is a natural fit for a dried fungus, and there's no beef flavor underneath to argue with the sauce. Texture is chewy and slightly spongy, which is what dried button mushroom does; it's a different eat from meat jerky, not an imitation of one.
